Basic Zucchini Bread

3           Eggs
1 C        Vegetable Oil
2 C        Sugar
3 C        Flour
2 C        Zucchini, pealed and grated
2 tsp     Vanilla extract
1/2 C     Chopped nuts
1 tsp     Salt
1/4 tsp  Baking powder
3 tsp     Ground Cinnamon
1 tsp     Ground Cardamom
1 tsp     Baking soda

Preheat oven to 325F Grease and flour two 8x4 inch loaf pans. In a large bowl, beat eggs until light and frothy. Add oil and sugar; mix well. Stir in zucchini and vanilla. Add flour, cinnamon, soda, baking powder, salt, and nuts; mix well. Pour into loaf pans. Bake at 325F for 60 to 70 minutes or until done. 1
