Note: A nice thick sauce that will sit well on any
crust. This recipe makes enough for 2 large crusts.
It freezes beautifully, so don't worry about having
extra.
1 Tblsp olive oil
1/2 cup finely chopped onion
1 1/2 tsp minced garlic
1 can (28 oz)tomato puree
1/2 tsp each: salt, pepper, and sugar
Heat oil in medium sauce pan. Add onion
and cook over medium or low hear 5 min, stirring
occasionally, until soft. Add garlic and cook until
fragrant. Stir in remaining ingredients. Bring
to a boil, reduce heat and simmer partially covered,
5 min or until slightly thickened. Makes 3 cups.
