Thai Cucumber Salad

1/2 C  Rice or White Wine Vinegar 1/2 lb  Cucumbers, cut into 1/4 inch slices
4   Shallots, peeled and thinly sliced
1/4 tspnbsp; Red Chili pepper flakes
1 tbs  Cilantro/Coriander/Chinese Parsley, chopped

Combine vinegar, sugar and salt and pepper to taste in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved. Combine with remaining ingredients in a bowl. Toss and marinate at least 30 minutes before serving. 1
