Only Adult Link is able to enter the Gerudo's Fortress. Time stands still here, but there is only a minor difference between the daytime and nighttime versions. Two Pieces of Heart and two Gold Skulltula can be found here.
Before you have the Gerudo Card, the guards will arrest you and put you into a cell. The way to avoid getting captured is by getting the Gerudo Card by freeing the carpenters from the Thieves' Hideout.
Once you have the Gerudo Card, you are able to thoroughly explore the Fortress. You will also have access to the Gerudo Training Ground, the Horseback Archery Range and the Haunted Wasteland.
The entrance to the Haunted Wasteland is in the far west of the Fortress. The entrance is blocked by a large gate, but behind the Gerudo guarding the gate is a tall ladder which leads to the gatekeeper. The gatekeeper will warn you of the dangers in the wasteland, but will be happy to open the gate for you regardless.
You don't have to complete the Gerudo Training Ground, but you should just as a test of your skills. If you succeed in clearing the fortress, you will get the Ice Arrows. The entrance to the grounds is marked by a large gate with a Gerudo guarding it.
The actual fortress of the Gerudos has several entrances and exits, making it a long and winding interior maze. There are several powerups to be found in there, but nothing outrageously nice.

Once you have the Gerudo Card, a new area appears on the map. Ride Epona to this area during the day (the range is closed at night) and there will be a Gerudo near a brown horse. When you are on Epona's back, talk to the Gerudo. For 20 Rupees, she'll let you have one attempt on the range.
