In Hyrule Field there are two Pieces of Heart, three Gossip Stones and two Gold Skulltula. Time passes normally in Hyrule Field, and certain aspects of it change during the day and night for Young Link.
Hyrule Field is basically the midway point for you to reach other areas of Hyrule, and holds little landmarks of its own. In the southwest is Lake Hylia: look around the fences for a ladder so you can reach the main entrance. The west entrance leads to Gerudo Valley, the north entrance will take you to Hyrule Town. The north-northeast entrance leads to Kakariko Village, and the northeast entrance to Zora's River. The east entrance leads to The Lost Woods. In the very centre of the field is Lon Lon Ranch.

Young Link
When Young Link first enters the field, he will meet up with Kaepora Gaebora for the first time. Kaepora will appear every now and again during parts of the game, offering basic advice. Make sure you understand what he's saying before you proceed, because often you won't be able to hear this advice again. Your destination when you first enter the field is Hyrule Town, but once you have finished there you can go to anywhere you like.
You can speak to Kaepora Gaebora near the entrance to Lake Hylia, at at the tree near the turn-off to Gerudo Valley. You will only be able to talk to him once before he leaves these posts for good, so make sure you understand what he says. Also, the drawbridge which marks the only entrance to Hyrule Town will close during the night, and will only open upon the crowing of the morning rooster.
Also in Hyrule Field is a man who keeps running around: the Marathon Runner. He will stop for a rest as night falls, which is the only time you can talk to him. He actually runs pretty slow, so you'll have no trouble following him to his (random) resting spot.
There are hostiles in the field: during the day, there will be Peahats: large brightly-decorated plant objects which fly out at Link, some releasing their Larvae for a similar result. Deflect the Larvae away with your shield, but if you plan on attacking the parent Peahat make sure you attack the root, as if you attack it anywhere else it'll release its Larvae. Parent Peahats won't bother you during the night, but attack them at night and they'll still release Larvae.
The only other danger which is in the field are the Stalchilds. These skeletons pop out of the ground at night, attacking Link with their hard swipes. The Stalchilds offer no real problem - simply attack them constantly. Their head will fall off at first, but you'll have to destroy the body as well otherwise the Stalchild will keep chasing you. If you stand and walk along the dirt paths in the field, the Stalchilds won't come out at all.

Adult Link
There are only subtle changes to Hyrule Field over seven years, but still enough to make it known that Hyrule is not the same since Link was last here.
The drawbridge to Hyrule Town has been destroyed, allowing you to enter the town at any time of day. The sign pointing you in the direction of Lon Lon Ranch now reads 'Ingo Ranch', and the Marathon Runner no longer runs around the field. There is a new fence, too, bisecting the path nearest to The Lost Woods. Kaepora Gaebora does not appear at all.
The only hostiles which are in the field are Poes. They appear suddenly, lobbing fire at Link. Attack them if you must, but it's easier to ignore them and go on your merry way. If you're riding Epona, the Poes will not bother you but you may encounter some resistence from Big Poes.
