Time stands still at Kakariko Village, but the Village Centre has major changes between its daytime and nighttime versions. The Graveyard does have changes depending on the time of day, but only for Young Link. At Kakariko Village there are eight Pieces of Heart, eight Gold Skulltula and two Gossip Stones.

Village Centre
Be Link young or old, the village is basically a thoroughfare for other places, but does hold some pretty good bonuses of its own. The west exit will take you to Hyrule Field, the north entrance to Death Mountain, and the east exit to the Village Graveyard.

Young Link
Kakariko Village hardly changes during the game, save after Zelda is evacuated from Hyrule Town. Once that happens, the guards will tell you different things.

PLACES OF NOTE
Impa's House:
The largest house in the village, but Impa no longer resides there. It's now pretty much a place where several people stay overnight.
House of Skulltula: Once the home of a fabulously rich family, but the house is now deemed taboo by the village residents.
Kakariko Inn: A place for visitors to stay overnight. The owner of the Inn is a very lovely lady and maks a great platter of food. The Hylian Carpenters are currently booked to stay here while they work on the Village.
Little Kid's House: The lady of the house is very wary of strangers.
Empty House: One of the carpenters frequents this area.
Potion Lab: The mother of the Chief Carpenter lives here, studying hard to create new medicines.
Unfinished House: Hylian carpenters are working hard, trying to finsish this house so that it's suitable to live in.
Chook Corral: During the day, Dampé's sister takes care of her chickens, making produce to sell.
Windmill: The windmill helps Kakariko Villager's to draw water up from the well. There's an Organ Grinder in there who's trying to write a song based on the windmill.

During the day, the Hylian Carpenters are hard at work building the village into a true city. The Chief Carpenter says that his men don't work too hard...but you'll find that the Chief doesn't pitch in an awful lot!
Mostly you'll have to talk to the carpenters, but there are many other nice people to have a chat to. Look in all of the houses and you'll be able to find them all. They make for pretty good conversation.
There are guards who are also around the village, who can also offer you some clues. They'll also be able to tell you the time. One of the gaurds is rather bored at his post, and is dying to head back to Hyrule Town.
During the night, all of the villagers are inside their houses for a good long sleep. All of the carpenters who were outside can be found in Karkariko Inn. All the characters will tell you new things, except the Skulltula family.

Kakariko Inn: A place for visitors to stay overnight. The owner of the Inn is a very lovely lady and maks a great platter of food. A redundant Talon can be found here, sleeping away.
Bazaar: Identical to the one Young Link could find at Hyrule Town, but with a different location.
Potion Shop: Moving here from Hyrule Town, the shop still sells the same stuff it always has.
Potion Lab: The mother of the Chief Carpenter lives here, and only needs one secret ingredient before she can make Blue Potions!
Shooting Gallery: Self-explanitory, but now Link gets to use a Bow instead of a pesky Slingshot!
Windmill: The Organ Grinder is still in there, but in a worse mood than before.

Kakariko Village is now the equivalent of Hyrule Town, since everyone has moved here to avoid the full brunt of Ganondorf's evil. You'll find that it's exactly the same. The gate blocking the way to Death Mountain is no longer there: someone must've torn it down.
There is a dark cloud over the Village until you get the Fire Medallion, due to the dark cloud which is over Death Mountain. There is also a change to much of the dialogue when you're upto the Shadow Temple, and also after you complete it; it also rains in the Village when the Phantom Shadow Beast is alive and free.

Graveyard
Young Link
During the day at the Graveyard, there will be a young boy imitating Dampé the gravekeeper. While that boy is present, you won't be able to pull over the graves and see if anything is hidden underneath them (like hidden grottoes). During the day, if you pass over certain points, Poes will appear.
Between 1800 and 2100, Dampé the gravekeeper will be out and about. If you've got a few Rupees to spend, you can try your luck and obtain upto a Red Rupee in his Heart-Pounding Grave-Digging Tour. You can also have access to Dampé hut, and if you're feeling really nosey you can read his diary.
There is a soft soil patch in the bottom-left corner of the graveyard, opposite Dampé's hut as you cross the entrance.

Adult Link
The three major changes to the Graveyard are: Dampé has died, so you won't be able to go on the Gravedigging Tour but can enter his hut at any time; the little kid doesn't patrol during the day, so you can mess around with the graves whenever you like; and that you can have a race with Dampé's ghost.
To find the ghost of the gravekeeper, first go left as you enter the graveyard to the grave along the left perimeter with three bushes in front of it. Pull the stone back, and you'll have access to a hole. You can now drop in and race Dampé's ghost for various treasures: my record is 58 seconds. It's quite easy to reach the end; take mostly left turns for the first half, then after you pass the first checkpoint take the first right.
