Time stands still at Lon Lon Ranch, and there are a large number of differences between the ranch during both day and night. There is one Piece of Heart, four Gold Skulltula and no Gossip Stones at the ranch.
The ranch consists of a stable, the ranchers' house (opposite the stable), and a small hidden room behind the corral on the south wing.

Young Link
During the day, there are no hostiles at Lon Lon Ranch. But if you go into the main field during the night, there are several crows who will attempt to dive-bomb Link.

BEFORE THE RENDEZVOUS
If you visit the Ranch before you meet Talon at Hyrule Castle, you will find it identical regardless of whether or not it is day or night. Ingo will be in the stable, whinging as usual. Talon and Malon will be nowhere in sight.

THE NORM
After you send Talon back to the ranch when you find him at the grounds of Hyrule Castle, the ranch essentially does not change. Ingo remains in the stable, saying at what a no-hoper Talon is and wishing himself was in charge of the ranch. You will not be able to enter the ranchers' house at night.
In the ranchers' house, there will be Talon with a flock of chooks. You can challenge him to a Super-Chook Finding game for 10 Rupees to win some pretty good prizes.
Out in the main field of the ranch, there will be Malon with a fole named Epona. You will soon learn that Epona can be tamed only with the notes Malon sings.

Adult Link
INGO RANCH....???
The first thing you will notice about Lon Lon Ranch is that now....it doesn't exist!! According to Malon, Ingo cheated Talon out of the ranch; according to Ingo, Ganondorf Dragmire fired Talon. It would seem that Ingo overrated Talon's laziness to Ganondorf in order to get control of the ranch!
Malon is treated like a slave to Ingo, but she can't leave out of fear for the animals' safety. Since Ingo won't let Malon sing her mother's song, she can only do it at night. Epona, Malon's favourite horse, is doomed to be given to Ganondorf soon; it would seem that Epona is Ingo's part of a bargain between the Evil King and Ingo.
The only thing Link can do is show Ingo he's not the best man in Hyrule by resucing Epona....

MADE TO ORDER
Once you have rescued Epona, all will be well again at Lon Lon Ranch. Ingo will consider himself a lowly worker again, and Malon will continue to sing her mother's song loud and clear at all hours of the day. You will be able to participate in an Obstacle Course by talking to Malon.
Talon does not return to Lon Lon Ranch until you talk to him at Kakariko Village Inn. That done, he turns over a new leaf and is determined to work very hard from now on.

Obstacle Course
Cyber Predator's Record: 48 seconds.

After you gain Epona for good, you can participate in the ranch's Obstacle Course for free by talking to Malon. It consists of two laps around the corral, jumping over the fences which are in the way. If you miss a jump, you'll have to forfeit the race. If you can make a time of 49 seconds or better, Malon will have a cow delivered to Link's house.
There are a few things you should remember when going for record times:

  • Hug the corners as much as possible to save time.
  • Use your carrots effectively. Wait for them to regenerate and you'll be able to keep your speed constant.
  • The ankle-sized fences don't require carrots to jump.
  • Medium-sized fences require a speed of about one carrot to jump.
  • The REALLY big second-last fence requires a strong run-up and a carrot to pass.
