Cranberry Muffins


  • 1Can Cornbread Muffin Mix (Marie Callendar's is the best)
  • 1-1/2 Cups Cranberries, Coarsely Chopped
  • 1/2 Cup Walnuts, Chopped (optional)
  • 1/4 Cup Sugar
  • 1 Egg
  • 1/2 Cup Milk
  • 6 Tbsp. Melted Butter
  • 2 Tbsp. Orange Peel
  • 1/2 cup orange juice
  • Preheat oven to 400 degrees F. Mix the cornbread mix and sugar together. Stir in the egg, juice, milk, and butter just until moistened. Line muffin tin with papers; fill 2/3 full. Bake approximately 12 minutes (note dust cranberries with flour to prevent from sinking).
