Potatoes with Garlic
1 lb. potatoes, peeled and cut into thin wedges
1 Tbs. plus 1 tsp. olive oil
2 cloves garlic, crushed
1 tsp. rosemary, chopped
1 tsp. parsley, chopped
1/4 tsp. mustard
2 tsp. lemon juice
Preheat oven to 375 degrees F. Place potatoes on greased oven trays. Bake about 30 minutes or until just tender. Combine next ingredients in a bowl. Stir into potatoes and toss until potatoes are well coated with mixture. Spray with cooking oil spray. Turn on broiler. Place potatoes 4-5 inches from heat source and broil another 8-10 minutes, stirring occasionally until browned and tender. Season with salt to taste and serve.
Serves 4 grown men, 2 Aurochans (serve only as a side dish with meat as a main dish), or 10 street kids.
