Desserts
The final touch is the dessert. Think of who you are serving. Try not to make anything too rich. Always make the dessert beforehand, if possible.
Currant Scones
Ingredients
2 cups cake flour
2 cups bread flour
1 tb. baking powder
1/4 cup butter + extra for greasing pan
1/4 cup sugar
2 eggs
1/2 cup milk
1/2 cup currants
1 tb. sour cream
1 egg yolk
1-2 tsp. water
Directions
- Sift cake flour, bread flour, and baking powder into bowl.
- Beat butter and sugar until creamy. Add eggs and 1/4 cup milk, currants and
sour cream. Mix dough lightly but thoroughly.
- Roll out dough 1/2 inch thick and cut into 2-in rounds. Place on lightly
greased baking sheet. Beat egg + water to brush scones.
- Bake at 350° till golden brown -- 25 min.

INGREDIENTS:
1 egg yolk
4 oz. cream cheese
1 cup sour cream
1 cup heavy cream
1 teaspoon honey or sugar
Any amount of any type of berry
DIRECTIONS:

Ingredients:
2 2/3 cups of confectioners' suger-2/3 cup soft butter
3/4 teaspoon vanilla-2 tablespoons milk-1 cup chopped almonds
1/2 cup chopped, dried apples, candied is desired
In small mixer bowl, blend suger, butter, and vanilla at low speed.
Gradually add milk; beat until smooth and fluffy. Mix in almonds and apples.

Candied Chestnuts
Ingredients:
Chestnuts-how ever many you want (or any other kind of nut)
Brown Sugar-about 1/2 cup for each cup of nuts
Vegitable oil
Powdered sugar-enough to coat the nuts
Procedure:
Pour a bit of oil in a skillet. You don't need much, just enough to spread around the skillet. Pour the brown sugar in the skillet and caramalize it. Put the nuts in and let them sit for a few minutes. Just get them covered with the brown sugar. Take them out and place them on a paper towel. Coat with powdered sugar and Voila!

Ingredients:
6 egg whites
pinch of salt
1 1/2 cups white sugar
1/2 dried blackberries,rassberries, elderberries
2 tsp. cornstarch
2 tsp. vinegar
1/4 vanilla
Procedure:
1.Beat egg whites add salt untill stiff
2.Continue beating, add half of sugar slowly untill disolved
3.Combine other half of sugar and cornstarch and beat into eggs
4.Fold in vinegar and vanilla, dried berries
5.Sparay and cover a cookie sheet with waxed paper
6.Put mixture on paper in large circle shape
7.Preheat oven to 300, turn down to 250, bake untill crisp
8.Let cake cool in oven
9.Turn upside down, peel off waxed paper
10.Cover with elderberry flavored icing
11.When icing set, cover in honey cake with pear slices[not,cut]

Ingredients:
Vanilla cake mix
Pear slices
Vanilla pudding
Procedure:
1.Make the vanilla cake mix
2.Cut cake into three pieces
3.Cut pear slices smaller
4.Drain slices
5.Mix pear slices with a little vanilla pudding
6.Use pear mixture as filling
&.Drizzle extra pudding [now diluted with pear juice]on top of cake
8.Fill middle with extra drained pear slices
9.Edge bottom of cake with pear slices[not,cut]

Honey Apples
Ingredients:
1/2 c honey
2 tbsp vinegar
1/4 tsp salt
1/4 tsp ground
cinnamon
4 medium cooking apples
unpeeled, cored and cut to 1/2 in rings
Mint Leaves
Cinnamon sticks
Preparation:
Combine honey, cinnamon, salt, and vinegar in a large skillet, then
bring to a boil. Add apple rings, then reduce heat and simmer for 8-10
minutes, turning apples once. Let cool slightly and garnish with mint
leaves and cinnamon sticks.

Strawberry Cream
Ingredients:
1 bottle strawberry flavour
1 carton half and half milk
1 bottle club soda 1 bottle whip cream.
Preparation:
Fill cup 1/4 full with flavouring. Fill cup 1/4 full with half and
half. Fill the rest of the way with club soda. Put whip cream on top.

Meadowcream Pudding
Ingredients:
1 bow of lemon pudding
Candied nuts
Any fruit or berries
Mixed fruit jello
Preparation: Make the pudding and jello, like it says on the back of the box. To
make candied nuts, brush the nuts with sugar-water, or honey. Bake in the
oven around 350 degrees for 5 minutes. When you have made the candied nuts,
pudding, and jello, mix in the fruit and everything else in a large bowl.
Let the pudding cool in the refrigerator for an hour.

Cellar Hare Apple Pie
Ingredients:
1-15 oz package Pilsbury Pie Crusts
6 cups thinly sliced peeled apples
3/4 c sugar
2 T flour
1/8 t nutmeg
3/4 t cinnamon
1/4 t salt
1 T Lemon juice
Preparation: Prepare pie crust according to package for 2-crust pie using 9"
pan. Preheat oven to 425F. In large bowl, combine remaining ingredients.
Mix lightly. Spoon into pie crust lined pan. Place 2nd crust over top of
filling. Fold edge of top crust over filling and flute edge. Cut slits in
several areas. Bake 40-45 minutes.

Lemon Tea Cookies
Ingredients:
1 teaspoon finely shredded lemon peel
2 teaspoons lemon juice
1/3 cup milk
1/2 cup margarine or butter
1 3/4 cups all-purpose flour
1 cup sugar
1 egg
1 teaspoon baking powder
1/4 teaspoon baking soda
2 tablespoons lemon juice
Set the oven to 350 degrees F
Method: Stir the 2 teaspoons lemon juice into milk. Let stand 5 minutes.
Beat margarine or butter with an electric mixer for 30 seconds on high
speed. Add about half of the flour 3/4 cup of the sugar and the egg, baking
powder, soda, lemon peel and milk mixture. Beat till thouroughly combined.
Beat in remaining flour.
Drop by rounded teaspoons 2 inches apart onto a ungreased cookie sheet.
Bake in a 350 degree F oven for 10 to 12 minutes. Cool cookies on a wire
rack. Stir together remaining sugar and the 2 tablespoons lemon juice;
brush on cookies. Makes about 48 cookies.
