Salmon Pots with Wasabi Sauce
Ingredients:
450g fresh salmon
100ml olive oil
100ml sunflower oil
2 TSP dried capers (chopped)
1 shallot (chopped)
dill sprigs and capers
Seasoning
1 tbsp vinegar
2 tsp wasabi
some salt
some pepper
Instructions
1. Line 5 Small pots with plastic wrap, sliced salmon and cover each pot
2. Whiz the egg yolks with salt and pepper and Wasabi in the food processor, drizzle in the oils till smooth (turning into something like mayonaise)
3. Cut the remaining salmon into small cubes and miz with the wasabi capers and shallot.
4. Divide the salmon mayonaise between the pots and chill.
5. Eat.
