Carreteiro's Rice


A typical gaucho meal, called "ox-wagon drivers' rice".

2 cups Rice
4 cups Water
1 ea Onion Chopped fine
1 lb Beef Dried salted beef
2 Tbsp Oil

Wash salted beef and leave soaking overnight.  Change water a few times to remove salt.  Cut into small pieces and fry in oil with the chopped onion.  Add rice and fry for a few moments, then add the water. Cook on low fire, covered, until rice is ready (about 25 min).
