Cod Stew

2 | ea | Green Peppers | Julienne |
1 | lb | Tomatoes | Crushed (can) |
2 | ea | Onions | Chopped |
10 | oz | Green Beans | Frozen |
10 | oz | Corn | Whole kernel, frozen |
1 | tspn | Salt & Pepper | |

Cut potatoes into 1" chunks. In 4 qt saucepan over high heat, boil potatoes in 3 cups water to boiling. Reduce heat to low, cover and simmer for 10 min or until potatoes are almost tender. Meanwhile, fry onions and green peppers. Add crushed tomatoes, frozen beans and corn to potatoes in saucepan. Heat to boiling on high. Add onions and peppers. Stir in cod and salt. Heat to boiling. Reduce heat to low, cover and simmer 5 min or until cod flakes easily when tested with a fork. Individually pour some olive oil. to taste. Makes 4 servings.
