Orange Marmalade


Very easy to make, and much superior to any commercial brand..

2 lb Oranges (or tangerines)
3 lb Sugar
4 ea Lemons
2 oz Orange liqueur Rum is also fine.

Peel oranges. Save some peels. Put a large pan on medium heat with one litre of water. Put a couple of oranges in the food processor and process to mash the oranges, then place in large pan.  Repeat until all oranges are processed. Do the same with the lemons. Let mixture boil and then simmer for about 10 minutes. Remove from heat and sieve out all solids (pulp and seeds). Return the liquid to the pan on medium heat and add the sugar. Slowly bring to a boil under constant stirring until sugar dissolves.

Cut the orange peels in a food processor in thin strips and add to the orange and sugar mixture. Let it boil for about 20 minutes or until jelly forms. Cool for about 20 minutes, add liqueur and pour into sterilised jars. Seal immediately.
