Roast Duck in Orange Sauce


 1 ea  Duck  About 4 lb 
1 ea  Onions  Chopped 
1 cup  Orange Juice   
 3 Tbsp  Butter  Melted 
1/4 cup  Honey   
 1 ea  Lime   
 1/4 lb  Bacon  Sliced 
 3 Tbsp  Baking Soda   
 1 Sprig  Rosemary  Fresh 
    Salt & Pepper   

Soak the duck overnight in a large pan with the baking soda.  Drain duck.  Rub salt and pepper inside and out.  Place onion  and rosemary in cavity.  Place in roaster, cover with bacon strips and baste with sauce.  Add a little water and roast at 350F for 2 hours or until done, basting with sauce every 20 min. 

Make sauce combining orange juice, honey, butter and lime juice.
Serve with rice, pasta or polenta.
