Roast Pork


6 lb Pork Loin
1/4 cup Soy Sauce
1 ea Onion Large, sliced in rings
3/4 cup Sugar
2 ea Laurel Leaves
1 tspn Ginger Grated
2 tspn Salt
2 cloves Garlic Minced
1/2 cup Lemon Juice

Place the loin of pork in a large roasting pan and scatter the onion rings over it.  Combine the remaining ingredients and stir until the sugar dissolves.  Pour this over the meat and cover with plastic wrap. Refrigerate about 12 hours, turning every once in a while.

Preheat the oven to 325F. Place the meat in the oven and bake, basting frequently, about 3:30 hours, or until the meat is thoroughly cooked. Serves eight.
