Tartar Sauce
A good, all-purpose fish sauce.
1 | ea | Egg Yolk | |
1 | tspn | Wine Vinegar | |
2 | Tbsp | Mustard | Dijon or similar |
1/4 | cup | Parsley | Fresh, finely chopped |
3 | drops | Tabasco Sauce | |
3 | Tbsp | Onion | Finely chopped |
1/4 | cup | Sour Pickles | Finely chopped |
1 | cup | Olive Oil | |
3 | Tbsp | Capers | Drained and chopped |
Salt & Pepper |
Place the yolk in a mixing bowl and add the vinegar, mustard, Tabasco. Add salt and pepper to taste. Beat vigorously for a few seconds with a wire whisk or electric beater. Start adding the oil gradually, beating continuously with the whisk or electric beater. Continue beating and adding oil until all of it is used. Add the lemon juice and more salt if necessary. Add the remaining ingredients and blend well.
