Tartar Sauce


A good, all-purpose fish sauce.

1 ea Egg Yolk
1 tspn Wine Vinegar
2 Tbsp Mustard Dijon or similar
1/4 cup Parsley Fresh, finely chopped
3 drops Tabasco Sauce
3 Tbsp Onion Finely chopped
1/4 cup Sour Pickles Finely chopped
1 cup Olive Oil
3 Tbsp Capers Drained and chopped
Salt & Pepper

Place the yolk in a mixing bowl and add the vinegar, mustard, Tabasco. Add salt and pepper to taste.  Beat vigorously for a few seconds with a wire whisk or electric beater. Start adding the oil gradually, beating continuously with the whisk or electric beater.  Continue beating and adding oil until all of it is used.  Add the lemon juice and more salt if necessary. Add the remaining ingredients and blend well.
