White Pudding with Orange Sauce
(Pudim de Claras)


12 ea Egg Whites
1.5 cups Sugar

Line a 2-quart baking pan with caramelised sugar, made with 1/2 cup of sugar. Beat whites until stiff and gradually add in the remaining sugar. Pour into the pan and bake in Bain Marie in preheated 325F oven for approx. one hour. Remove from oven when completely baked. Allow it to cool at room temperature. Loosen sides with sharp knife and remove from pan.

Orange Sauce:

1.5 cups Orange Juice
2 Tbsp Corn Starch
1 tspn Orange peel Shredded fine
4 Tbsp Sugar

Mix everything and cook for a few minutes. Let cool and pour over pudding when serving.
