My favourite recipes

For a few years, I've only made one cake, and this is it.

My Mum's sultana cake

1 cup sultanas
1 cup hot water
1/2 teaspoon baking soda
1 cup sugar
1/2 lb butter
2 eggs
2 cups plain flour

Put sultanas, water and baking soda in a bowl. Cover and leave for several hours (overnight preferably, or all day).

Cream butter and sugar. Add eggs, then sultana mixture, then flour.

Bake in a round tin at 325F for about an hour and a quarter.

Mum never bothered lining the tin with paper unless the recipe specified it, and this one doesn't. She just greased the tin, dusted it with flour all over, and put the excess flour back into the mixture. The cake comes out easily.


Lois's quiche

that doesn't need pastry

4 eggs
1 1/2 cups milk
1/2 cup self-raising flour
4oz grated cheese
chopped bacon, ham, tomato, mushroom, whatever

Bake in quiche dish at about 325F for about 40 minutes, or until done.


Shirl's mixture

(my aunt's recipe)

mince (1 lb or more)
1 tin of tomato soup
1 packet French onion soup
1 cup macaroni
chopped onion(s)
maybe some celery
basil
water

Cook in a pot until done. Brown the meat first if really enthusiastic, I usually don't bother.
