ALEX'S RECIPIES





GUACAMOLE

2 avocados
¼ cup chopped onion
¼ cup diced tomato
¼ cup cilantro
lime juice to taste
salt to taste
hot sauce to taste

When avocados are ripe, peel and mash them. Chop the onion and tomato. Add onion, tomato and cilantro to the avocado. Add lime juice, salt and hot sauce to taste. Serve with tortilla chips.


STRAWBERRY-BANANA SMOOTHIE

¼ cup strawberries
½ banana
1 cup vanilla yogurt
2 T. orange juice

Put the fruit in a blender. Add yogurt and orange juice. Blend until smooth. *Other fruits can be substituted if desired. If smoothie is too sweet, make with plain yogurt.


THAI SPINACH SALAD

A Taste of Thai™ peanut salad dressing mix
1 cup milk
spinach leaves
crumpled bleu cheese
pecans
shallots

Make salad dressing then refrigerate to cool. Mix spinach, bleu cheese, pecans and shallots. Toss in dressing.


VEGETARIAN SANDWICH

bread of choice (I prefer sourdough)
fresh bean sprouts
sliced Swiss cheese
1 avocado, sliced
sliced tomato
iceberg lettuce
mayonnaise and/or mustard

Spread mayo and/or mustard on both halves of bread. Layer sprouts, cheese, avocado, lettuce and tomato.
I call this the Vegetarian Sandwich because it was all I ate for lunch my first year as a vegetarian.


EASY CHEESE TORTOLLINI

1 package cheese tortollini
olive oil
a few cloves garlic, minced
pepper
parmasean cheese, grated

Cook the tortollini. Drain. Mix in just enough olive oil to coat the pasta. Toss with garlic, pepper and parmasean cheese. I like it served with Ceasar salad.


TUNA-SWISS SANDWICH

sliced bread (I prefer White Mountain or Rye) 1 can Tuna fish
mayonaise
sliced swiss cheese
salt and pepper to taste

Make Tuna fish and spread on bread. Add sliced Swiss. Grill sandwich until it is heated through and cheese is melted.
