Basic Soup
Basic Ingredients
- 1-2 onions, diced
- 1-2 carrots, cut into thin rounds
- 1-2 ribs celery, diced
- 1 can (15 oz.) diced tomatoes with juice
- 1 bay leaf
- salt and pepper to taste
- water to cover
Instructions
Throw it all in a pot and simmer until done. Well, there are some special instructions for variations.
Variations
Lentil or Split Pea Soup
Add a 1 lb bag of lentils or split peas and 1 lb of diced kielbasa or ham with the bone.
Chicken Soup
Add 1 lb of chicken and 1/2 cup of white wine. A bit of poultry seasoning or just plain sage goes well with chicken.
Use either diced left over cooked chicken, or you can simmer fresh skinless chicken in the broth then remove it from the bones and put the meat back in the soup. Skin is not good for soup, but bones are. You can also add, potatoes, rice, noodles, dumplings, Spaetzle, or Knopfli.
Beef Soup
Add 1 lb cubed beef and 1/2 cup red wine. A bit of paprika goes well with beef. You can also add, potatoes, barley (only a 1/2 cup at most, barley really expands), noodles, dumplings, Spaetzle, or Knopfli.
