Italian Breaded Kale
Ingredients
- 1 large bunch fresh kale
- 3/4 cup salted water
- 1/4 cup light olive oil
- 1 med clove garlic diced
- 1 cup course bread crumbs
- 1 cup gated Parmesan or Romano cheese
Instructions
- Rinse the kale and tear into bite sized pieces, discard stalks.
- Bring salted water to a boil and add kale.
- Cover and cook until kale is just tender.
- Add oil, garlic bread crumbs and cheese, stir lightly and cook for about 3-4 minutes.
Theory of the Dish
I found this recipe in "A World Of Vegetable Cookery" by Alex D Hawkes. I use more cheese and bread crumbs than he does. It's a good use of kale.
