Carolina Chicken
Ingredients
- 3-5 lb chicken
- 6-8 c water
- 1 onion
- 2 ribs celery w/leaves
- parsley
- 2 tsp salt
- 1/4 tsp pepper
- 3 hard boiled eggs, diced
- 1 bag of frozen mixed vegetables (defrosted), peas, or green beans
- 1/2 c flour
- pastry for 9" double crust
Instructions
- Simmer the chicken in the water with the onion, celery, parsley, salt, and pepper.
- When the meat is cooked, remove it from the broth, take the meat off the bones, and cube it.
- Spread the chicken in a 13"x9"x2" pan. Add any other vegetables you want.
- Sprinkle the diced eggs on top.
- Make a white sauce with the broth
- Pour the white sauce over the chicken
- Make pastry dough
- Roll the dough out into one large rectangle and place over the chicken mixture, seal edges, and cut slits in the middle.
- Bake at 375°F for 45 min.

This recipe came from my sister Francesca. Fran says, "When I make it I tend to put in lots of veggies now and omit the eggs. Anything with piecrust is good :)"
