Cousin Christina's Tabouleh
I had never seen Tabouleh that was mostly parsley before.
Ingredients
- 3/4 cup bulger wheat
- 2 bunches of parsley, chopped (with the stems removed)
- 1 small bunch fresh mint leaves, chopped
- 1 bunch scallions (green onions), chopped
- 1 small carton grape tomatoes, halved
- juice of 3 lemons
- 1/2 cup olive oil
- salt
- pepper
In a microwave safe measuring cup measure the bulger then add enough water to make 2 cups. Microwave on high for 3 minutes. Refrigerate to cool
Submerge the parsley in a pot of cold water to remove all the grit. remove the stems and chop coarsely. Chop the mint and the scallions, halve the tomatoes.
Mix in the bulger, lemon juice, olive oil, salt, and pepper.
Refrigerate for at least an hour.
