Coq Au Vin (Chicken Braised in Wine)
Ingredients
- 1 chicken, cut into pieces
- 3 Tbsp oil
- 1 med onion, diced
- 1 carrot, sliced
- 1 clove garlic, finely diced
- 2 Tbsp parsley
- 1 tsp Chervil or Marjoram
- 1 sm bay leaf
- 1/2 tsp thyme
- 1 tsp salt
- 1/8 tsp ground pepper
- 1 Tbsp brandy (optional)
- 2 c dry red wine
- 1/2 lb sliced mushrooms
Instructions
- Using a large heavy pot brown the chicken pieces in oil.
- Add the onion, carrot, and garlic and brown lightly.
- Add the spices and wine and simmer covered on low heat for abut 1 hour.
- For the last 5 minutes add the mushrooms.
- Serve with rice.
