Cottage Cheese & Pineapple Salad
Ingredients
- 12 leaves Lettuce (Romaine, green, or red leaf)
- 3 cups Cottage Cheese
- 6 rings Pineapple, canned
- 6 Cherries, (Maraschino, or fresh pitted)
Instructions
- Put two leaves of lettuce on each plate.
- Place one 1/2 cup scoop of cottage cheese in the center of the lettuce.
- Place 1 pineapple ring on top of each scoop of cottage cheese.
- Top with cherries.
- 6 servings.
Theory of the Dish
This is a wonderful light salad. If you don't have pineapple rings you can make a hollow in the center of the cottage cheese and fill it with crushed pineapple, diced canned peaches, or applesauce. As a desert cottage cheese and applesauce is better than ice cream.
