Quick Hollandaise, Béarnaise, and Mayonnaise Sauces
Quick Hollandaise Sauce
Ingredients
- 1/4 lb butter (one stick)
- 3 egg yolks
- 2 Tbsp lemon juice
- 1/4 tsp salt
- pinch of paprika
Instructions
- Melt the butter in the microwave.
- Put the rest of the ingredients in a blender.
- Turn the blender on low.
- Gradually add the butter blending until the sauce is thickened and smooth.
Quick Béarnaise Sauce
Ingredients
- 2 Tbsp white wine
- 1 Tbsp tarragon vinegar
- 2 tsp chopped tarragon
- 2 tsp chopped shallots or onion
- 1/4 tsp ground pepper
- 1/4 lb butter
- 3 egg yolks
- 2 Tbsp lemon juice
- 1/4 tsp salt
- pinch of cayenne (or paprika)
Instructions
- Combine the wine, vinegar, tarragon, shallots and pepper in a skillet. Bring to a boil and cook rapidly until almost all the liquid disappears.
- Melt the butter.
- Place the egg yolks, lemon juice, salt, and cayenne in the blender. Blend on high while gradually adding the melted butter until the sauce is thickened and smooth.
- Add the herb mixture and blend on high for 4 seconds.
Quick Mayonnaise Sauce
Ingredients
- 2 egg yolks
- salt
- 2 tsp Dijon mustard
- 2 tsp vinegar
- freshly ground pepper
- 1 1/4 c olive oil
Instructions
- Put everything but the olive oil a blender.
- Blend on high while gradually adding the olive oil until the sauce is thickened and smooth.
