Quick Hollandaise, Béarnaise, and Mayonnaise Sauces

Quick Hollandaise Sauce

Ingredients

Instructions

  1. Melt the butter in the microwave.
  2. Put the rest of the ingredients in a blender.
  3. Turn the blender on low.
  4. Gradually add the butter blending until the sauce is thickened and smooth.

Quick Béarnaise Sauce

Ingredients

Instructions

  1. Combine the wine, vinegar, tarragon, shallots and pepper in a skillet. Bring to a boil and cook rapidly until almost all the liquid disappears.
  2. Melt the butter.
  3. Place the egg yolks, lemon juice, salt, and cayenne in the blender. Blend on high while gradually adding the melted butter until the sauce is thickened and smooth.
  4. Add the herb mixture and blend on high for 4 seconds.

Quick Mayonnaise Sauce

  1. Put everything but the olive oil a blender.
  2. Blend on high while gradually adding the olive oil until the sauce is thickened and smooth.
