Peanut Butter and Jelly Muffins

Ingredients

Instructions

  1. Preheat the oven to 375°F
  2. In a large mixing bowl combine flour, baking powder, salt and brown sugar.
  3. In a microwave safe bowl combine the butter, peanut butter, and honey.
  4. Heat in the microwave until the butter is melted then mix thoroughly.
  5. Mix the milk, eggs and vanilla.
  6. Pour the liquid ingredients into the dry and stir until blended.
  7. Spoon into buttered muffin cups, or cupcake cups.
  8. Make an indentation in the center of each muffin and spoon in a 1/2 tsp of jam.
  9. Bake at 375°F for 18-20 minutes.
  10. Cool before serving.
  11. Make approximately 1 doz muffins or 2 doz cupcakes.
