Gluten-free Peanut Butter Cookies

Ingredients

Instructions

  1. Preheat oven to 400 degrees F
  2. Mix the ingredients together
  3. Form into walnut sized balls. (I actually bought the #40 serving scoop for proper portioning, and this recipe makes 14 cookies.)
  4. Smoosh the balls flat with the characteristic crossed fork tine pattern.
  5. Bake for 12-15 minutes until the edges begin to brown.

Theory of the Dish

Peanut Butter contains enough starch and oil so it doesn't need any more to make a good cookie. You can substitute 1/2 cup white sugar and 1/2 cup brown sugar for more flavor. Or go all brown sugar if you want.
