Jean's Spinach Balls
This recipe comes from my friend Jean Meka
Ingredients
- 6 eggs
- 2 10 oz. packages frozen spinach drained and squeezed dry
- 2 cups herb stuffing mix (I used pepperidge farm)
- 1 large onion grated
- 1 cup parmasan cheese
- 3/4 cup butter
- 1 tsp. poultry seasoning (optional)
- salt and pepper to taste
Instructions
Preheat oven to 350 degrees
Beat eggs in large bowl. Add remaining ingredients and blend well. Form into walnut size balls.
Put on greased cookie sheet.
Bake about 20 minutes till golden.
Serve with prepared horseradish/mayonaisse sauce mixed with honey mustard for dipping.
[I thought the horseradish dip was a bit strong, I go with my favorite Honey-Mustard-Curry dip. -Zahdé]
