Heat the oven to 425º
In a skillet brown the ground beef
While that is browning chop the onion and garlic
Add to the ground beef and sauté.
Then add the diced tomatoes w/ green chilies, whole corn (w/ juice), chili powder, Salt & pepper
Let that simmer for 15 min while you make the topping.
Mix the corn meal, flour, sugar, salt, baking powder, beaten eggs, and milk
Pour the meat mixture into a 2qt casserole
Pour the corn mixture over it.
Bake for 20-25 min until the corn topping is brown and crispy.
Serve as is, or top with sour cream and cheese.
[If you have a casserole pan that is stove top safe you can brown the meat in it, and dirty one less dish.]
