Zahdé's Turbo Hummus
Ingredients
- 2 to 3 cloves garlic
- 2 cans garbanzo beans (chickpeas), 1 drained, 1 not drained
- 2 to 4 tablespoons smooth peanut butter
- 2 Tbs dry parsley (optional)
- 2 Tbs dry chives (optional)
- 1 fresh scallion chopped (optional)
- 2 Tbs lemon juice
- pepper and salt to taste
- 2/3 cup extra-virgin olive oil
Instructions
- Chop the garlic finely in a food processor.
- Add the beans and (with the liquid from one can) process finely.
- Add the peanut butter, parsley, chives, scallion, lemon juice, black pepper, and salt.
- Process until smooth while drizzling in the olive oil.

I got this from Alton Brown.
What I love about this recipe is that it uses things I normally have on hand.
It tastes great with white beans, black beans, or lima beans too.
