Spaghetti or Pasta Sauce
If possible, use fresh herbs for the Basil, Rosemary and such. But if you cannot, don't worry, this comes out so great anyway.
2 6oz cans of Tomato Paste
4 peeled and diced medium tomatoes
1 tsp crushed Oregano leaves
1/4 tsp powdered Marjoram
1 tsp Thyme
1 tsp Basil
1 tsp Rosemary
1/4 tsp Sage powder
1/4 cup diced Green Bell Pepper (or more if you'd like)
1/2 cup diced white onion
1 1/2 tsp Lime juice
2 cloves minced Garlic
1/2 cup Chicken Broth
3 whole Bay leaves
1/2 packed cup brown granulated sugar
Combine all ingredients except the sugar into a sauce pan or electric skillet. Bring to a boil while stirring ingredients. Reduce heat to a simmer, cover and allow to simmer for 30 to 40 minutes.
Remove the Bay leaves, add brown sugar and stir until the sugar is dissolved. Vary amount of sugar to taste. This comes out noticeably sweet but not overbearing.
Serve as you would with any traditional spaghetti sauce.
Makes 4 servings.
4/20/02 .. update!
I made this again yesterday and decided to UPGRADE this to a more substantial meal. It came out wonderful! Cook up 1 lb. of spicy breakfast sausage and drain the fat. Add a 6oz can of mushrooms buttons and pieces. Increase the Chicken Broth to 1 1/2 cups and simmer for one hour. Add sugar at the end as before. Wow!
