The banana ia a sacred food to the Hindus, and is often magically associated with male virility. This fruit was found by Magellan and his captains in the Phillipines, and was called a "long fig".
1 1/2 cups of sugar
1/2 tsp grated orange rind
1/2 cup butter, softened
2 1/2 cups self-rising flour
2 eggs
2/3 cup chopped macadamia nuts
1/2 cup buttermilk
1/2 cup flaked coconut
3 large ripe bananas, mashed
1/2 cup crushed pineapple, drained
2 tsp vanilla extract
Preheat the oven to 350 degrees. Grease a 9x5x3-inch loaf pan. Beat the sugar, butter, eggs, Buttermilk, bananas, vanilla, and orange rind in a large bowl. Add the flour; stir until smooth. Fold in the nuts, coconut, and pineapple. Pour into the loaf pan. Bake until a knife inserted comes out clean, about 60 minutes. Cool before serving. Yield: 1 Loaf
Note: If you are not using self-rising flour, add 3 tsp baking powder and 1 tsp salt.
