1 cup bulghur (cracked, parboiled) wheat
1 cup boiling water
1 teaspoon salt
1 teaspoon dried mint
1/2 teaspoon dried basil
1/4 cup lemon juice
1/4 cup extra-virgin olive oil
2-3 cloves garlic
2-3 chopped green onions
2 cups finely chopped parsley
2 medium tomatoes, diced
Combine first 8 ingredients in a bowl, cover and let sit 15 minutes. Add
remaining ingredients and mix thouroughly. Put in fridge, but cover well, as
it may make your milk taste like garlic. But it's really good. Paul said so.
