Chicken & Rice Bake

Ingredients:

6 large chicken thighs
1 clove garlic, minced
1/4 cup cooking oil
1 cup uncooked rice
1 12oz can vegetable juice
3/4 cups water
1 3oz can sliced mushrooms
1 cup celery, chopped
1 cup onions, chopped
1 teaspoon salt
1/3 cup green olives, cut in half
1/4 teaspoon black pepper
1 cup green sweet peas, canned or froozen

Instructions:

Season chicken pieces with salt.
Heat garlic in oil. Add chicken and brown slowly.
Remove chicken and add rice; brown slowly.
Stir in vegetable juice, water, mushrooms, celery,
onion, salt, pepper and olives.
Bring to boil. Put mixture in oblong glass baking dish.
Top with chicken pieces.
Cover dish tightly with aluminum foil.
Bake at 375 for one hour....
Uncover and sprinkle peas around chicken.
Cover dish again and bake 15 minutes longer....
