Okay!!! So you want Cajun food.. Well have I
got the recipes for you. They came from a cookbook that I found at my parents
home. It belonged to my Dad's oldest sister. Not sure how long my dad
had it or how he got it...but it's very interesting to read some of the
recipes in there. So, Cajun is what I found and Cajun is what I'll share....But
first a short history.
New Orleans has long been the paradise of American gourmets, not
only because of the sophisticated cooking compounded of French technique
imported at it's golden age, the best of Spanish dishes, the touch of
African Magic, and some rare secrets learned from the Indians, but also
because its waters furnish the finest fish and seafood, and it's wild
rice marshes and forests swarm with game.
But all of Louisiana does not eat alike. There are two other kinds
of meals besides those elaborate ones of New Orleans -country or plantation
style, and Cajun.
The Cajuns are descendants of the French Canadians and their cooking
is even more French than that of New Orleans. The Cajuns still speak French.
They live close to the earth and the "redbones" who subsist in the bayous
on crawfish, called craw daddy and crawl daddy, alligator tail, and blue
catfish.
So with that in mind.....
Taste buds beware.....
