Seafood Jambalaya

Ingredients:
1 pound shrimp, peeled
1 doz. oysters
1 pound crab meat
1 pound smoked sausage
2/3 cup cooking oil
2 large onions, chopped
1 cup bell pepper, chopped
2/3 cup parsley, chopped
2/3 cup shallots, chopped
1 small can rotel tomatoes
3 cups rice
6 cups water

Saute onion in oil until lightly browned. Add bell pepper and
continue cooking until onions are a dark brown in color.
Add rotel tomatoes and cook for 15 minutes on medium heat stirring occasionally.
Add sausage and cook 15 minutes. Add shrimp, crab meat, oysters,
parsley and shallots and cook 10 minutes.
Add rice and stir until all is well blended. Add water. Bring to a boil.
Lower heat to low and cover. Cook about 45 minutes or until rice is cooked.
Remove from fire and stir......
