Shrimp Okra Gumbo

This is my Dads recipe.... The best gumbo I've ever eaten..
He cooks his in a black iron pot. If you don't have one,
any heavy pot will do...

1/2 cup oil
1 large onion chopped
1 large green bell pepper chopped
1 cup celery chopped
1 can rotel tomatoes
4 cups sliced fresh or frozen okra
1 pound smoked sausage, sliced or cubed
1 pound shrimp, peeled
salt and pepper to taste

Add oil to heavy 4 quart pot. When oil is hot add onions and
bell peppers. Cook until soft and turning brown. Add celery
and continue to stir. When celery has softened add the can of rotel.
Cook until all water has cooked from the tomatoes add the sausage.
Cook til the sausage has started browning.
Add okra and lower fire. Cook until the okra has softened.
Add shrimp, salt and pepper. Stirring until the shrimp are pink.
Raise fire to medium high. Add 3 quarts of hot water and bring
to boil.
Lower fire and let simmer for 1/2 hour stirring occassionally.
Serve over rice...
Enjoy!!!
