Fresh Bread Rolls
3/4 cup milk
1/4 cup sugar
2 1/4 teaspoon salt
3/4 cup warm water
1 pk Active Dry Yeast
4 1/2 cups sifted flour
4 1/2 Tablespoon shortening, {crisco}
Pour milk into sauce pan and heat to scalding point. Turn off
heat. Stir in sugar, salt and shortening. Let mixture cool to
luke warm to protect the action of the yeast.
Measure water into a large mixing bowl. Test for warm, not hot.
Add yeast and stir. When milk mixture is luke warm add to dissolved
yeast.
Stir in half the flour. Beat or mix until smooth.
Add remaining half of the flour. Knead for 8 minutes. When finished,
place in greased bowl and spread soft shortening on top. Cover with
towel or waxed paper. Place in warm place, usually in warm water.
When doubled in size, punch down, folding the edges toward center.
Then turn dough in the bowl so that the smooth side of the ball is up.
Turn the dough out onto a lightly floured pastry cloth. A resting
period of 3 to 5 minutes makes the dough easier to handle.
The dough should feel warm and is easier to handle. Now it is ready
to shape...
After dough is shaped and covered, set it aside in a warm spot for
final rising. When it is puffy and light; press very gently with
your finger tips.... If the slight indentation remains, it is ready
to bake...
Place in preheated oven....425.....15 to 20 minutes....
Shape in Loaves....
Cut dough in half shaping into small loaves...Place in greased pan
to wait for it to rise.... Bush top with melted butter before covering.
Shape in Clover Leaf....
Form dough into small balls. Dip each into melted butter and place
three balls in each section of a greased muffin pan...
Shape in Cresent Rolls....
Roll dough into circlular shape. {as if making pizza}
Cut in triangle shape. Brush top with melted butter, then roll
starting with larger end. Place on greased cookie sheet to rise....
