Spice Cake with Cream Cheese Frosting
2 cups all-purpose flour
1 1/3 cups sugar
1 tablespoon plus 1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup shortening
1 cup milk
1 teaspoon vanilla
2 large eggs
Easy Caramel Icing, (below)
Sift together flour, sugar, baking powder, salt, cinnamon and nutmeg.
Add shortening, milk, and vanilla; beat on slow to medium speed
of electric mixer for 2 minutes.
Scrape sides and bottom of mixing bowl several times.
Beat in eggs and continue to beat for 2 minutes longer.
Spoon batter into a generously greased and floured 9x13x2-inch baking pan. Bake at 350° for 40 to 45 minutes.
Cream Cheese Frosting
1/4 cup butter
1 package (8 ounces) cream cheese, room temperature
1 pound confectioners' sugar, sifted
2 teaspoons vanilla extract
Directions for cream cheese frosting
Combine all ingredients in large mixing bowl; beat well until smooth. Makes enough cream cheese frosting for a 2-layer cake.
