Pecan Pie Bars
2 cups flour
1/2 cup sugar
1/8 tea. salt
3/4 cup butter
1 cup brown sugar, firmly packed
1 cup light corn syrup
1/2 cup butter
4 eggs, beaten
2 1/2 cups pecans,chopped
1 tea. vanilla
Instructions:
Sift together flour, 1/2 cups sugar and 1/8 tea. salt.
Cut in with the 3/4 cup butter thouroughly until mixture resembles
very fine crumbs.
Press evenly into a greased 13 X 9 inch pan.
Bake at 350 for 17 minutes or until lightly browned.
Combine in a sauce pan the brown sugar, corn syrup and 1/2 cup butter.
Bring to a boil over medium heat stirring gently then remove from heat.
Stir 1/4 of the mixture into the beaten eggs.
Pour that mixture into the remaining hot mixture.
Stir in the pecans and vanilla.
Pour over crust and Bake at 350 for 30 minutes or until set.
