BRUSCHETTA

Grill or toast thick slices of French or Italian bread.
Rub with a clove of garlic.
Brush or drizzle olive oil over.
Sprinkle slivered dried (oil marinated) tomatoes,
and coarse black pepper. Sprinkle with freshly
grated Parmesan cheese.

Other toppings for Bruschetta:

Melt a layer of smoked mozzeralla on the toasted bread.
Then top with a spoonful of diced tomatoes mixed with
chopped red onion, capers and fresh basil.

Saute' mushrooms in olive oil with garlic and thyme to taste.
Top with shaved Parmesan cheese.

Mix ricotta cheese with kosher salt and freshly ground pepper.
Warm this mixture slightly in a nonstick skillet, then
spread it onto rounds of toasted bread. Top with crumbled
oregano and a drizzle of olive oil. 1
