2 cups sifted all-purpose flour
pinch of salt
6 tablespoons shortening
2 teaspoons baking powder
1/2 cup sugar
1 cup grated coconut (preferably fresh)
2 eggs, beaten
2 or 3 tablespoons milk or water
Grease small cake tins. Preheat oven to 450°F.
Sift flour and salt into bowl. Add shortening and mix with fingers.
Stir in baking powder, sugar and coconut. Add eggs and whip
to a stiff dough. Add liquid if needed. Knead lightly. Divide into
buns.
Bake 15-20 minutes
