FUDGE SAUCE
(Deep, rich sauce that hardens on ice cream
to a thick glaze. Makes 2 1/2 cups)
4 squares unsweetened chocolate
3 tablespoons butter or margarine
2/3 cup boiling water
1 2/3 cups sugar
6 tablespoons light corn syrup
1 tablespoon rum (may be omitted)
1. Melt chocolate with butter in a medium heavy saucepan over
very low heat. Stir in boiling water until well-blended. Add
sugar and corn syrup, mixing thoroughly.
2. Bring mixture to boiling, stirring constantly. Lower heat.
simmer until mixture thickens slightly, about 9 minutes.
Remove from heat. Cool 15 minutes. Stir in rum, if using,
and blend well.
