PEPPERMINT CANDY COOKIES
Makes 3 dozen cookies

Preheat oven to 350° F.

DOUGH
1 cup butter, softened (do not use oleo or shortening)
1/2 cup confectioners sugar
1 teaspoon vanilla
2 1/2  cups all-purpose flour
1/2 cup chopped walnuts

Cream butter, sugar and vanilla till fluffy. Add flour and walnuts.
Wrap in plastic wrap and chill for 1 hour.

GARNISH
1/4 pound peppermints, crushed finely
1/2 cup confectioners sugar

Combine and set aside

FILLING
2 tablespoons cream cheese, softened
1/2 cup confectioners sugar
1 tablespoon milk
1 drop red food color
3 tablespoons garnish

Cream the first 4 ingredients until smooth. Add 3 tablespoons garnish.

TO MAKE COOKIES
For each cookie, form a rounded teaspoon of dough into a ball , pushing
thumb into the ball to make a pocket in the center. Place 1/4 teaspoon
filling in the pocket. Pinch the dough together to cover.

Bake on a nonstick cookie sheet for 10-12 minutes. Do not brown.
Roll in garnish. 1
