AMISH CRANBERRY CAKE WITH BUTTER SAUCE

CAKE
2 cups all-purpose flour
1 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 beaten egg
3 tablespoons melted butter
2/3 cup milk
1 teaspoon vanilla 2 cups fresh or unthawed frozen cranberries

Preheat oven to 350°F.

Mix together the dry ingredients, set aside.
Beat together the egg, butter, milk and vanilla
and pour over the dry ingredients. Blend for 2 minutes
with a mixer. Add cranberries and mix quickly. Pour into a paper-lined
10-inch cake pan. Bake 40 minutes.

BUTTER SAUCE

1 cup butter
2 cups brown sugar
1 1/2 cups evaporated milk
1 1/2 teaspoons cinnamon

Place the ingredients in the top of a double boiler,
over simmering water. Cook and stir for 5 minutes. Ladle the
hot sauce over sliced cake. 1
