SEASONING MIX
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon cloves

1 1/2 pounds butternut squash
1 medium orange, cut in quarters
3 tablespoons cornstarch
3 cups + 5 tablespoons water
1 teaspoon vanilla
A little sugar if you wish
Combine seasoning. Set aside. Peel and cut squash into small
pieces. Slice 1/2 of the orange very thinly. Squeeze the other
and set aside. Preheat saucepan over high heat for 4 minutes.
Cook squash until light brown, 4 to 6 minutes. Turn and cook
3 minutes. Sprinkle seasoning over the squash. Add the 3 cups
of water and the juice. Stir and cook 5 minutes. Add cornstarch
and orange slices. Cook 5 to 7 minutes. Turn off heat and add
vanilla and sugar.
