CARROTS ELEGANTE
4 servings

1 pound carrots, thinly sliced
1/4 cup golden raisins
1/4 cup butter or margarine
3 tablespoons honey
1 tablespoon lemon juice
1/4 teaspoon ground ginger
1/4 cup sliced, unpeeled almonds

Cook carrots, covered, in 1/2 inch of boiling water
8 minutes. Drain. Turn carrots into a 1-quart baking
dish. Stir in raisins, butter, honey, lemon juice, and
ginger. Bake, uncovered, in a preheated 375°F. oven
for 35 minutes. Stir occasionally. Spoon into a serving
bowl. Sprinkle with almonds. 1
