FARMER'S BREAKFAST CASSEROLE

3 cups hash browns
3/4 cup shredded cheese
1 cup diced meat (ham, sausage, bacon, etc.)
1/4 cup sliced green onion
4 beaten eggs or 1 cup egg substitute
1 12-ounce can evaporated milk
1/4 teaspoon pepper
1/8 teaspoon salt

Grease a 2 quart casserole dish. Arrange potatoes evenly.
Sprinkle with meat, cheese and onion. In a bowl, combine
eggs, milk, pepper, and salt. Pour over the layers. ***At this point, it may be covered and refrigerated overnight***

Bake, uncovered at 350°F. for 40-45 minutes
(or, if chilled, 50-55 minutes) til center is set.

Let stand 5 minutes before serving. Makes 6 servings. Serve with a fruit cup. 1
